We leave the saucepan for 10 - 12 hours at room temperature. It is very convenient to prepare the dough after 9 pm, in the morning put it on a batch in a bread machine.

If I need it faster so that the dough rises, I put it on the radiator and cover it (this is in winter), and in warm time year in the oven with the backlight on, the temperature is about 30 degrees. Cooking time is reduced by two or more - 4.5 hours.

Rye bread is dense and heavy. Therefore, to lighten its texture, wheat flour is usually added to rye flour.

Ingredients:

  • water - 350 ml;
  • sugar - 1.5 tablespoons;
  • sunflower oil - 2 tbsp. spoons;
  • wheat flour - 390 g;
  • rye flour - 100 g;
  • rye bran - 5 tbsp. spoons;
  • apple cider vinegar - 1 tbsp. a spoon;
  • kvass dry - 2 tbsp. spoons;
  • salt - 1.5 teaspoons;
  • yeast - 2 teaspoons.

Ingredients:

  • water - 1 measuring cup;
  • dry milk - 1 tbsp. a spoon;
  • sugar - 1 tbsp. a spoon;
  • cheddar cheese - 100 g;
  • onion - 1 pc.;
  • wheat flour - 2.5 measuring cups;
  • dry yeast - 1.5 teaspoons;
  • dry mustard - 1 teaspoon;
  • bran - 50 g;
  • salt - 1 teaspoon;
  • dry basil - 2 teaspoons.

Cooking

Finely chop half an onion. We sauté it until transparent and send it to a bucket of a bread machine. Fill with warm water, sprinkle with sifted flour. In the middle we put yeast with sugar, in the corners - salt, mustard and basil. Add bran, mixed with grated cheese on a coarse grater.

  • olive oil (first pressing) -1 tbsp. spoons;
  • mustard oil - 1.5 tbsp. spoons;
  • liquid honey - 1 tbsp. a spoon;
  • kefir (fat content 2.5%) - 100 ml;
  • water - 235 ml;
  • sugar - 1 tbsp. a spoon;
  • flour - 500 g;
  • rye bran - 50 g;
  • salt - 1.5 teaspoons;
  • yeast -1.5 tsp.

Cooking

Pour warm water, kefir, butter, honey into the bucket of the bread machine. We fall asleep sifted flour, add bran. We make a recess in the flour, add sugar and yeast, put mustard and salt in the corners. We bake in the "Basic bread" mode on a full cycle. Now the hardest part of baking is to keep from eating the hot loaf.
