  • Red dry wine - 300-350 ml
  • Onion and tomato - 1 pc. (tomato or tomato paste)
  • Garlic - a few cloves
  • Butter and olive oil for frying
  • Flour - 4 table. l.
  • Salt, spices and spices - black pepper, cinnamon, bay leaf, a mixture of herbs (coriander, basil, thyme).

Soaked as in the previous recipe, rinse the rabbit, dry and cut into portions.

Peel and cut the onion into strips, dip the tomato in boiling water, remove the skin and finely chop. Peel the garlic and mince.

Roll the rabbit pieces in flour, put in a deep saucepan and fry in a mixture of fats (50 g plum oil + 50 ml olive oil) on both sides until browned (about 10 minutes).

Add the onion, tomato or tomato paste, minced garlic and aromatic herbs, salt a little and fry, stirring occasionally, for about 10 more minutes.

Pour dry or semi-dry natural red wine to the rabbit and let it boil. For a brighter accent, add a little cinnamon or nutmeg.

After the alcohol has evaporated, cover the saucepan with a lid and simmer over low heat, stirring occasionally for about an hour and a half. During stewing, if necessary, add water or wine to the sauce. After an hour, taste the dish, add salt and season with pepper.
