Lavash with smoked chicken and cucumber (video)

Enjoy your meal!!!

We are all familiar with lavash dishes. At least, if they didn’t eat them, they saw, for example, shawarma. And probably bought for testing in the store. After all, how convenient, if necessary, to quickly organize a small snack: throw a cake on the table, grease with mayonnaise, ketchup, put a few pieces of something meat, vegetables, wrap - and that's it, you can eat! So we will now consider how dishes are prepared from thin lavash. Yes, and learn how to make it yourself. It's very simple!

Cooking thin pita bread

You won't find an easier recipe anywhere. From water, flour and salt, in just a few minutes you can cook chic cakes. For seven medium-sized pita breads, we need: 300 grams of flour, 150-170 ml of boiled, slightly cooled water and half a teaspoon of salt.

To cook dishes from thin lavash, you first need to make it yourself. This is done in the following way. Pour the flour into a bowl and make a well in it. Dissolving the salt in hot water and gradually pour into the flour. Mix with a mixer until all the flour is dissolved. Then put the dough on the table and knead. After two or three minutes, you get a “bun”, which we remove under the film and leave for half an hour until it becomes and becomes smooth and soft.

Then we divide the dough into seven parts and roll each of the pieces into a cake with a maximum thickness of two millimeters and a little larger than a frying pan. Very important - fry in a dry frying pan, without oil! Heat it up over medium heat. Gotta get it right desired temperature so that the product turns out to be of high quality, but over time you will learn this. If you guessed right, then after 30 seconds the pita bread will begin to grow and bubble. So we all fry. We put the first one on a damp towel, then - further, layering all the cakes. When we fry the last one, the first one can already be twisted. That's it, now it's time to cook delicious dishes from thin lavash!

general information

We know many recipes for yeast dough pies. But not so long ago, culinary experts considering what dishes can be prepared from thin pita bread, they realized that pies can also be made from them. Why are they good? Because they require very little effort. Buy a few pita breads and put the filling between them. That's all, and they taste just as good as yeast!

Fillings can be any - to your taste - both salty and sweet. But it is recommended to give preference to those products that have already undergone heat treatment, for example, vegetables and stews, or those that do not need it - berries and cottage cheese. If you need to soften pita sheets, then use a mixture of eggs with kefir or sour cream for this. This mixture can also be used to bind the layers of the cake.

Recipe for the very first pita bread

For the first time such a recipe became available to the public in 2000. He was very successful and quickly spread to all culinary schools in the world. If you are going to cook dishes from thin pita bread, start with it. The finished product is very similar to what is sold at metro stations and is called "khachapuri". You will need the following ingredients: three or four pieces of pita bread, two eggs, half a liter of kefir, one hundred grams of cheese grated on a coarse grater (can be replaced with a mixture of cheese and cottage cheese) and margarine. The recipe is very simple.

A form is smeared with margarine, a couple of sheets of pita bread are placed in it, so that their edges hang down and they can cover the filling. The rest of the cakes are torn into pieces, dipped in a mixture of eggs and kefir, squeezed out a little and thrown into shape. Sprinkle everything with cottage cheese with cheese or cheese, cover with the edges of the pita bread, pour the rest of the kefir on top and put the pieces of margarine. We send it to the oven for 20 minutes. It turns out a dish with super taste!

Salted lavash pies

We recommend cooking other dishes from thin pita bread. There are a wide variety of recipes, some of which we will consider. First, a little about the formation of fillings. When preparing salty pies, vegetable, meat, cheese, cereal, egg fillings, as well as mixtures of the above are used.

Garlic and salt, fresh or dried herbs, and pepper are added to the sauce to taste. Sometimes the filling is crumbly and dry. In this case, the sauce can be mixed immediately with it. And if there is no such need, for example, in the case of stewed vegetables, then we lubricate the pita sheets themselves.

Sweet pies from lavash

Sweet dishes from thin lavash are filled with cottage cheese, dried fruits, different types jams, berries and fruits. The simplest such dish consists of pita bread, which is smeared with a standard sauce and granulated sugar is added.

There is a recipe for sweet cakes. In this case, you need to put several sheets of pita bread in the form, as in one of the previous cases - so that the edges hang over, more authentically. A hollow is formed, which we fill with the filling and then pour the sauce. Of course, from above the edges are wrapped up.

Let's pick it up and bake it

The assembly of such a dish from Armenian thin lavash is done in layers: first we put lavash, then a layer of filling, and so on. In the event that our filling is dry, each pita must first be greased with egg and sour cream sauce. When the filling layer is heavy and thick, then you need to put two pita breads together. This will prevent the cake from tearing. You can collect such a dish both in the form and right on the table. It is preferable to assemble in the form, since you can arbitrarily put cakes and stuffing, there will be room for an air gap, and this will allow the dish to bake better.

It is advisable to lay baking paper at the bottom of the form, but you can just grease vegetable oil. When assembling on the table, each cake must be folded into an envelope so that the filling does not spread.

How to bake an assembled pie? In the case when a ready-made filling is used that does not require special heat treatment, the cake is baked until browned, at a temperature of 180-200 degrees. If the filling is raw, then cover the cake with foil and bake from 30 minutes to one hour, at a temperature of 220 degrees. Before turning off the oven, remove the foil and lightly brown the top.

Cooking pita bread stuffed with salmon and cheese

We continue to cook dishes from thin pita bread. Recipes with photos will help us with this. We will fill this pita bread with a real festive filling, in which delicate sausage cheese is very successfully combined with lightly salted salmon, and crispy salad and green onions will give the dish unsurpassed freshness.

You can salt the fish yourself or use store-bought, no difference. Ingredients for the roll: one thin pita bread, 100 grams of salmon, a few green onion feathers, five to six green lettuce leaves, 100 grams of sausage cheese, 50 grams of mayonnaise.

Stuffing pita bread with salmon and cheese

We will fill the dish with thin pita bread. Photos will popularly tell about this process. We unfold the pita bread on the table and spread it well with mayonnaise. In the event that you bought an oval pita bread, then cut it around the edges to make a rectangle or square. So all the rolls will be neat and the same thickness. We cut the lightly salted salmon into thin slices, and rub the sausage cheese on a fine or medium grater. We will cut the green onion as small as possible. Now it’s not a very easy task to do - you need to evenly distribute sausage cheese over the cake. Here you have to try!

Lay the salmon pieces on top, then lettuce pieces and green onions. We roll our flat design into a roll, as tightly as possible. Then we pack it in cling film and send it to the refrigerator for at least one hour. We take out, cut into four-centimeter portioned pieces. The dish is ready, we serve it to the table. Many other dishes can be prepared in a similar way. different fillings, outwardly resembling the well-known shawarma.

A variant of a thin pita dish in a slow cooker

Now we will tell you how to cook in a slow cooker. This dish is another variant of savory and pita bread. It is not difficult to prepare at all, and then you can take it with you to nature or serve it for dinner with a vegetable salad.

Required ingredients: two or three sheets of thin pita bread, 0.5 kg of minced meat, one medium-sized carrot, one onion, green onion, 250-300 ml of kefir, one egg, 200 grams of hard cheese.

Cooking a pie in a slow cooker

Now we will tell, using the example of this pie, how they are prepared from thin pita bread. We take minced chicken made from whole chicken (makes approximately 550-600 grams). Fry it in a frying pan, along with carrots and onions, pre-processed as expected (peeled, chopped, grated, whoever is supposed to). Pepper a little, sprinkle with spices and salt. Since cheese is also salty, try not to overdo it with salt. We give the opportunity to cool the minced meat, and then mix with pre-grated cheese and finely chopped green onion. Here it is, completely finished.

Lubricate the multicooker bowl with a little oil. We cover it with pita bread. We spread exactly half of our minced meat on it. Now we take pieces of another cake, moisten eggs with kefir in a mixture and spread on top of the minced meat. Here you need to have a supply of kefir and eggs, since two glasses can easily go away.

The next step is to spread the remaining minced meat on crumpled pieces of pita bread. If they are still left, then put on the twisted meat. Then we pack the cake with the edges of the hanging cake.

At the end of the process, fill everything with the remaining kefir. If it is not there or almost gone, you can add melted butter. It's time to bake our dish in a slow cooker. We do this for an hour. You can turn over and brown the other side. If you use the oven for baking, then 25 minutes is enough. We take it out and, voila, the meat pie with pita bread is ready! Enjoy your meal!

Rolls of thin pita bread for the festive table

The easiest option for making pita snacks is rolls with various fillings. Make it simple:

  1. Spread the pita bread on the table.
  2. Brush with sauce.
  3. Put in the filling.
  4. Roll into a roll.
  5. Put the seam down, place in the refrigerator for half an hour.

After that, it remains only to cut, put on a dish and serve.

The main thing is to choose ingredients for the sauce and filling that harmonize well with each other. We offer several options:

  • thick mixture tomato sauce, chopped greens and mayonnaise, lettuce, boiled sausage or ham;
  • soft cheese, red fish slices;
  • a mixture of cottage cheese with garlic and sour cream, chicken breast;
  • mushrooms fried with onions, melted cheese, pickled cucumbers;
  • mayonnaise mixed with grated eggs, crab sticks, fresh cucumber straws.

You can come up with your own options, the main thing is that the products are combined with each other. It is not excluded the use of sweet fillings, for example, from melted chocolate, boiled condensed milk, processed cheese, fresh berries or baked fruit.

Thin lavash pie

Usually prepared as follows:

  1. Lay a sheet of pita bread in a mold so that its edges hang down. You can put two thin sheets of pita bread crosswise.
  2. Tear the other pita bread into pieces.
  3. Mix kefir with egg.
  4. Put a layer of filling on the pita bread in the form.
  5. Moisten the pieces of pita bread in the kefir-egg mixture, put on the filling.
  6. Lay out the second layer of the filling, lay the second layer of Armenian lavash soaked in kefir-egg mixture.
  7. When the filling is over, cover it with the ends of pita bread hanging from the mold.
  8. Pour the remaining kefir with an egg.
  9. Bake in the oven.

The filling for such a pie can be very different:

  • minced meat fried with onions;
  • pieces of chicken mixed with fried mushrooms;
  • grated cheese mixed with chopped egg or fish;
  • cottage cheese with herbs or with sugar and cinnamon;
  • apple slices sprinkled with sugar.

Fantasy here can be limitless, the only warning is not to overdo it with juicy vegetables.

By the way, you can use another form of the pie: cut a sheet of Armenian lavash into 3 thin strips lengthwise, grease them with filling, roll them into long thin rolls, put them in a spiral shape and bake in the oven.

"Pies" from thin pita bread

It is easy to cook shawarma, sama, pasties from Armenian lavash. You just need to make a suitable filling, roll up, fry in a pan in oil.

For shawarma, cabbage is suitable, which needs to be poured with sauce, chicken, cut into pieces and laid out on top of the cabbage, another layer of cabbage. All this filling is laid out in the center of a rectangle cut off from pita bread, rolled up with a tube, after bending the ends on the sides so that the filling does not fall out.

For chebureks, minced meat is suitable, which must first be fried until almost cooked.

“Pies” made from thin pita bread are very tasty according to this recipe:

  • Armenian lavash - 2 pieces;
  • hard cheese - 0.2 kg;
  • chicken egg - 2 pcs.;
  • mayonnaise - how much will go;
  • vegetable oil - how much will go;
  • green onions - 50 g.

It will be prepared like this:

  1. Grate the cheese. It will be tastier if you take a solid one, but melted one is also suitable.
  2. Peel and grate hard boiled eggs
  3. Finely chop the onion with a knife.
  4. Mix cheese, onion and eggs, adding mayonnaise. You should get a pasty mass.
  5. Cut each pita bread into 8 pieces.
  6. Place a spoonful of filling on each piece. Roll the pita into a triangle.
  7. Fry in oil on both sides until the triangles are browned.

Dishes from Armenian lavash are good because they can be made from almost everything that is at hand, you just need to dream up a little. However, when inventing recipes, there are a few things to keep in mind:

  • do not use too liquid sauces, otherwise the pita bread will get wet and will spread;
  • for the filling it is better to take not too fatty foods;
  • you should not store dishes from thin pita bread in the open air, as it dries quickly and becomes brittle;
  • try not to overexpose the pita dish in the oven or in the pan.

It is better to store pita bread in a bag so that it does not dry out and does not become brittle. At the same time, storage periods (usually 72 hours) should not be exceeded, since pita bread can become moldy.
