It's great when you manage to harvest blackberries to eat. And it’s even better when there are enough berries to make blackberry compote for the winter, even if it’s a quick recipe. A very tasty compote is obtained if you make assorted berries. For example, strawberries and blackberries will make an excellent flavor combination. But there are different nuances in the preparation of assorted compotes, and we will return to this issue more than once. In the meantime, let's prepare a clean blackberry compote for the winter without sterilization according to a quick recipe.
Ingredients for a 3 liter jar of blackberry compote:

  • Blackberry - 1 half-liter jar;
  • Sugar - 300 - 350 g;
  • Drinking water.

Blackberry compote for the winter without sterilization, step by step recipe

1. In this recipe, it is very easy to calculate the water. Since when picking a blackberry, a rod remains inside it, which cannot be removed in any way, you need to pour boiling water over the berries 2 times. Do not worry about the integrity of these fruits. All blackberries will remain whole and beautiful. Sort the blackberries from ponytails, leaves and spoiled fruits and rinse over a colander. You can leave the berries in the same colander to drain while you prepare the container.

2. Naturally, you do not have to take exactly a three-liter jar. You can take any container, and any capacity. And count sugar for 1 teaspoon per 100 grams of your dishes and be sure to taste it. If the blackberries are too sour, then more sugar will need to be added and vice versa.
Clean the container with soda, as described in the article for the winter. Be sure to sterilize clean jars with steam or pierce in the oven.

3. It is not necessary to dry the jars after the oven, but if sterilization was carried out using a double boiler, then it is better to turn the container over on a towel.

4. Place blackberries in clean jars. At least 1/4 of the selected container should be berries. To make the compote richer, increase the amount of fruit.

5. Pour boiling water over the blackberries for the first time and spot for 10 to 15 minutes. Ten minutes is enough, but if the blackberries are from the refrigerator, then you can hold them for 15 minutes.

6. If you are sure that you washed the blackberries well for compote for the winter, then drain the water from the cans directly into the pan and put it back on the stove. Pour sugar into the same pan in the ratio indicated in the ingredients. You can adjust the sweetness to your liking. Citric acid does not need to be added, because there is enough of it in blackberries.

7. When the compote syrup boils, fill it with blackberries a second time and close the lid for the winter.

We can say that the seaming is already ready. It remains to turn the jars upside down and cover with a blanket.

In summer, when it is hot, the seaming will cool down for a long time. For about a day, blackberry compote for the winter prepared without sterilization and citric acid will cool. And when the jars have cooled, you can turn them over and put them in a closet or basement.

Blackberries, in addition to being able to remove carcinogens from the body, have an incredible taste and forest aroma. Blackberries, and the elements contained in it, are not afraid of heat treatment, therefore, it is not only possible, but even necessary, to cook compote from blueberries, including with the addition of other berries and fruits.

The taste of blackberry and raspberry goes well together. They are close relatives, but completely different in taste. The sweet raspberry dilutes the acidity of the blackberry, while the blackberry adds a forest flavor to the raspberries.

Blackberries are a very delicate berry, like raspberries, so try to pick them immediately after rain, when the berries wash and dry on their own.

To prepare blackberry compote, we need:

  • 3 liters of water;
  • 0.5 kg of blackberries and raspberries;
  • 0.5 kg of sugar;
  • Optionally, you can add a sprig of mint.

Put the clean berries in a saucepan, and sprinkle them with sugar. Pour in water and put the compote to boil.

Sterilize jars. As soon as the compote boils, start stirring it gently so that the sugar melts faster. It is advisable to meet with cooking in 3-5 minutes. Although blackberries are not afraid of boiling, the taste and aroma from a long boil may weaken somewhat.

Carefully pour boiling compote into a jar, and roll up with a metal lid. Wrap a jar of compote with a warm towel and leave it in this position overnight.

Blackberry compote without cooking

In clean, dry jars, arrange the blackberries, about ¼ of their height.

Pour boiling water over the berries and cover with a lid. Let the berries rest a little.

When all the berries sink to the bottom, drain the water from the jar into a saucepan and add sugar to the blackberry broth.

Forest blackberries can be somewhat sour, therefore, the amount of sugar must be selected for a specific variety of berries. On average, 1 cup of sugar is added to one liter jar.

Boil the syrup and pour over the berries. It is not necessary to pasteurize such a compote, immediately close the jars and hide them under a warm blanket. Long cooling completely replaces pasteurization of compote.

Store blackberry compote in a cool, dark place for up to 18 months.

Foreword

Blackberries are one of those berries that are not only tasty, but also healing. Preparations from it will allow you to enjoy its aroma and taste and use it for medicinal purposes, to maintain immunity.

Regardless of the method of preparation and recipe, only ripe berries should be taken for blackberry blanks. They will no longer ripen at home, like, for example, gooseberries. Before processing the berries must be prepared. First, we remove all the garbage: leaves, twigs and insects, if they come across. Then, carefully, so as not to wrinkle, wash them, preferably in the shower, otherwise the jet from the tap can damage them. We spread the washed blackberries in a colander and, while the water drains, clean it - tear off the tails.

At the same time, care must also be taken not to crush the berries. You need to pull out the tails like this: first, in a circular motion, turn them inside the fetus, and then pull them out of it. Washed and peeled berries should be sorted and dried well. For preparations for the winter, only fresh, whole and unspoiled ones are suitable. Soft and sluggish berries are best used for summer compote. Mint can still be suitable for preparations for the winter, in the recipes of which it must be crushed or ground.

Packing blanks should only be in carefully washed and sterilized jars, which are closed with lids prepared with no less diligence. Store the finished product in a place prepared for this, dark and cool. If the workpiece is rolled up hot, the container with it is turned upside down, wrapped in something warm and dense (towel, blanket, and so on) and only after cooling to the temperature in the room is hidden for storage.

This method of cooking for the winter allows you to almost completely preserve the vitamins and minerals that blackberries are rich in, and, therefore, the beneficial properties of its berries. Therefore, if the main purpose of the blank is therapeutic and health-improving, it is best to freeze the blackberry. You can freeze only whole, elastic and strong berries, even if a little unripe. Therefore, prepared blackberries should be carefully sorted.

There are 2 ways to freeze blackberries. The most preferred is in the freezer using the quick freeze function. Berries should be laid out in 1 layer on a clean cutting board, which is then placed in a chamber where we set the minimum temperature. After an hour, the blackberry will freeze, and it must be transferred to plastic containers or plastic bags, and then, already packaged, returned to the freezer.

To freeze in the second way (immediately placing the berries in a container), more bags or containers will be required. Here it must be borne in mind that the fruits are not subject to re-freezing, and therefore, having thawed a portion of the blackberry, it will all have to be used - cooked and eaten right away.

For 1 kg of fruit, you should take 1–1.5 kg of sugar - depending on how sweet the finished product should be. The fruits are covered with sugar and carefully ground with a wooden pusher until a homogeneous mass is obtained. Then the resulting mixture is left to infuse for 12 hours in a cool place. After that, after making sure that the sugar has completely dissolved, the jam is once again thoroughly mixed with a spoon and, spreading out into jars, closed with plastic lids or rolled up with metal ones.

Blackberry jelly is a very tasty and at the same time easy, light dessert that will serve as an excellent end to any feast. To prepare it for the winter, you can use the following recipe. You will need:

  • blackberry - 1 kg;
  • lemon (larger) - 1 pc;
  • sugar - 2.5 kg;
  • gelatin - 70 g;
  • water - 2 glasses.

We place the prepared berry in a container for cooking, fill it with water, and then add sugar. We mix everything, put on the stove and, heating to a boil, cook until the fruits become soft. Then we wipe the resulting mixture through a sieve, add the juice squeezed from the lemon and gelatin diluted in water into it. Then mix the future jelly and put it on the stove again. Cook it without boiling until it thickens. Pour the finished jelly still hot into jars and roll up.

Jelly with apples. You will need:

  • blackberry - 1.5 kg;
  • lemon (medium) - 2 pcs;
  • apples - 1.5 kg;
  • sugar - 800 g per liter of juice obtained during processing;
  • carnation (buds) - 10 pcs;
  • water - 2.5 liters.

We put apples, prepared blackberries and cloves chopped into a saucepan, like compote. Then we squeeze the juice from the lemons cut in half there, and cut them into slices together with the peel and also add them to the berries and fruits. Pour everything with water and, stirring, heat to a boil. Then reduce the heat, cover the pan and cook its contents for 1 hour. Then we transfer the resulting slurry to gauze, folded in 2-3 layers, and hang it over a clean container for several hours. To speed up the straining, after cooling the fruit and berry mixture, gently squeeze the juice out of it through gauze by hand.

The amount of juice obtained must be measured. Add sugar to the fragrant liquid - per 1 liter 800 g. Then mix everything well until the sugar is completely dissolved and cook, stirring constantly, until thickened. When foam appears, carefully remove it. Pour the jelly into containers and roll up.

Blackberry jam is tasty and healthy. It can also be attributed to a dessert, with which only jelly from this berry can compete. The proposed recipe is "Kiev Jam". For him we take:

  • berries - 1 kg;
  • blackberry leaves - 0.1 kg;
  • sugar - 1 kg;
  • citric or ascorbic acid - 5 g;
  • water - 500 ml.

First, cook a decoction of the leaves for 20 minutes. Then we make syrup: pour sugar with 1 glass of broth and dissolve it, and then heat this mixture to a boil. Immerse the prepared berries in syrup and let them stand for about 2 hours until they release the juice. Then add acid to them and cook for about 10 minutes. Pouring
