Stir the mass with a wooden spoon and close the lid tightly. Lactic acid bacteria are microaerophiles (that is, they grow when oxygen access is limited, but not completely blocked). In order for the air to remain in the jar, the water is not filled to the top.

We put the jar in a warm and dark place (or cover it with a towel or a black garbage bag). The mixture will ferment for 2 days. You can't leave it for longer.

After 2 days, our mixture for Izotov's oatmeal jelly looks like this. The sour smell is very weak.

The first thing we do is strain the whole mixture through a sieve.

We got: 2 liters of oatmeal filtrate and oatmeal.

Then we wash the oatmeal with clean water. We rinse so that the cloudy oatmeal liquid is also collected in a separate container.

As a result of all procedures, I got: 2 liters of filtrate of higher acidity (No. 1) and 800 ml of filtrate of lower acidity. Outwardly, they are similar. We leave the filtrate to settle for 16-18 hours.

After a while, the filtrate separated into 2 distinct layers. The top one is oat kvass, and the bottom one is the basis for oatmeal jelly. We collect oat kvass (top layer) with a tube.

The thick white liquid at the bottom of the jar is the basis of Izotov's oatmeal jelly. We collect it in a separate container. I got almost 500 ml of the base for Izotov's oatmeal jelly and 1.5 liters of oatmeal kvass.

And now we cook our own oatmeal.

We take 3-4 tablespoons of the base. She is on a white saucer and it turned out to be hard to see. The resulting 500 ml is enough for 7-8 days of daily preparation.

Pour the base with 1 cup of water and cook, stirring for 5 minutes.

After 5 minutes, the jelly will begin to thicken. Wait for the thickness you need.

The taste of oatmeal jelly itself is none. So I add: honey and dried fruits. I add them after cooking, when the jelly cools down.

The filtrate collected in the sump is left there for 16-18 hours, after which two layers are formed in the sump: the upper layer is liquid, the lower is a white loose precipitate. The top layer must be removed through a rubber tube, and the bottom layer is the oatmeal concentrate (it is subsequently used not only for making oatmeal jelly, but also for lactic acid fermentation, adding 2 tablespoons of this concentrate to the water suspension of oatmeal instead of kefir).

Storage of oatmeal concentrate. The oat concentrate collected after filtration is transferred to glass jars of smaller capacity, closed with a lid and stored in a refrigerator. The longest storage time is 21 days. As needed, small portions of the concentrate are taken from the jar to make jelly.

Cooking oatmeal. Mix a few tablespoons of oatmeal concentrate (each person chooses according to his taste: from 5 to 10 tablespoons) in two glasses of cold water, bring to a boil over low heat, stirring vigorously with a wooden spoon, then boil to the desired density (5 minutes is enough).
