Which recipe did you like best?

Natalya 11/13/13
Kids really love these things; for these hamburgers I use special children’s ketchup and leave out the mayonnaise at all. And instead of cutlets, sometimes I use steamed pieces of chicken fillet, it turns out tender and no less tasty.

Olga 01/22/14
I made the hamburgers according to the recipe and decided that now I would say NO to store-bought ones. Is it possible to compare these tastes, homemade is always better!

Egor 01/26/14
If you roll out the cutlets on a board, then you can’t get them off the board; if you roll them in your hands, they turn out too thick and have a terrible shape. On high heat it burns very quickly and splashes all over the kitchen. In general, I made 3 pieces and quit. Maybe your hands are crooked

Alyona
Egor, cooking is both a science and an art. It takes a lot of patience and practice. If you want to roll out on a board, then to prevent the cutlets from sticking, use cling film (film, cutlet, film), although everything can be done just fine with your hands))) The heat, if very high, should be reduced. The cutlet should be fried, but not burnt. Oil shoots out a lot if it is poured into a wet frying pan.
I hope that next time you can show off your own homemade hamburger)))

Lina 05/11/14
Thank you, the hamburgers are just great! Now we often cook in the dorm :)

Lyusik 05/27/14
The hamburger turned out delicious. It's a shame we didn't have any buns on hand. Had to cook with sliced bread for toast. But, as it turned out, this did not affect the taste of the American sandwich at all.

Sofia 06/14/14
The burger turned out delicious! Still, McDonald's doesn't have much meat, just offal. But the homemade cutlet contains real selected beef. Hence the taste!

Oksana 09/23/14
Homemade hamburger is a guarantee of product quality. For me this is the main thing. I've already been poisoned at McDonald's once, and I don't want to again.

Olga 01/18/15
Indeed, why spend money and buy who knows what, if you can cook such a delicious thing at home. At the same time, you will be sure that they won’t slip you some nasty stuff. Moreover, instead of a cutlet, if you don’t want to bother with minced meat, you can take a piece of fried sausage, I tried that too, it turns out delicious.

Denis 01/26/15
Great recipe. I make the cutlets in advance by stretching the minced meat on baking paper and freezing it. Then the paper comes off easily, and the cutlet turns out thin. I fry it frozen for 2-3 minutes on both sides, which allows me to get a crust and juice inside. All you have to do is select the ingredients and the hamburger is ready in 15 minutes.

Alyona
Denis, thanks for the interesting addition. The idea is great, especially in case of unexpected guests - I took the preparations out of the freezer, fried them, assembled the hamburger - and the treat is ready!

Irina 03/11/15
Mmm.. how delicious, it just made my mouth water. Will I need to cook it, but only beef cutlets are suitable? Would lamb work? And if without onions, you will get the same hamburger taste as at McDonald's7

Alyona
Irina, a hamburger patty can be made from different meats (lamb, pork, chicken, venison, etc.). It is clear that the taste of such a cutlet will differ from the taste of a classic hamburger, but this has more advantages than disadvantages)))

Max 04/23/17
Lies! Your hamburger is completely different from McDonald's. You can't feel the ground skin, tendons, lard, horns and hooves in the cutlet at all :))))

Alyona
Max, very accurately noted)))))))

Irishka 02.05.17
My friends and I made a whole mountain of hamburgers using your recipe. The boys praised and devoured every last piece. Thanks a lot!

Elena 05/13/17
Excuse me, but how do you make your “super cutlets” without eggs?

Alyona
Elena, sleight of hand and no fraud)))))) Well, seriously, don’t add an egg to the hamburger, just like bread, otherwise you’ll actually end up with cutlets (the hamburger has a completely different taste). And so that the hamburgers do not fall apart during frying, the minced meat should be kneaded well with your hands so that the meat releases juice and becomes almost uniform in consistency. By the way, when preparing lula kebab, you don’t add an egg either, and despite this, it holds up perfectly on the skewer.

Anna 05/14/17
It turned out very tasty! Thank you!!

Dmitry 06/18/17
This is not a hamburger, but some kind of homemade version of a cheeseburger.

Alyona
Dmitry, a cheeseburger is a type of hamburger with the obligatory addition of cheese)))))))))))))))

Anna 11/12/17
Thank you! Made a hamburger for the first time. I wouldn't have thought to fry the bread, it turned out very tasty).

I won’t lie and honestly say that my family really loves quick snacks. These are, as a rule, sandwiches, hot dogs, burgers and similar fast food foods. I was looking for a recipe for delicious burgers for a very long time and collected it, so to speak, bit by bit. From one chef I learned how to prepare a delicious sauce, from another how to properly prepare cutlets, from a third what buns are needed, etc. Today I propose to cook burgers according to my recipe and I assure you, they will be much tastier and more beautiful than the store-bought ones you know.

Ingredients

  • buns with sesame 5 pcs
  • beef 700g
  • onion 1 pc.
  • tomato 1 pc.
  • toast cheese 5 pcs.
  • lettuce 5 pcs.
  • mayonnaise 3 tbsp.
  • sour cream 2-3 tbsp.
  • sweet mustard 1 tsp.
  • wine vinegar 1 tsp.
  • vegetable oil 2 tbsp.
  • salt to taste
  • pepper, h.m. taste

How to make a burger at home

Beef for cutlets should be of good quality, a shoulder blade is best. Grind the meat in a meat grinder with a large sieve, but do not add salt or pepper. Wash the lettuce and tomato under running water and dry with a paper towel.

First you need to prepare the sauce. Mix medium fat sour cream, mayonnaise and sweet mustard, salt and pepper the sauce to taste. Cut the onion into rings and sprinkle with wine vinegar, this will remove the bitterness and make it tastier.

Oddly enough, I found the perfect buns in the frozen section, where they sell buns for hot dogs and burgers, and if you have a Subway in your city, they sell very good sesame buns under their own brand. The buns, of course, must first be defrosted, cut into two parts, and dried on the inside in a dry frying pan until slightly crispy.

Mix the minced meat well, but do not beat it like for cutlets, it should be airy. Form cutlets, fry them for 3 minutes on each side in a minimum amount of vegetable oil. If you want beautiful and even cutlets, you can form them using a serving ring, but I prefer to form the cutlets by hand, so they look more natural.

Now let's start assembling our burgers. Spread the sauce on the bottom of the bun.

Add lettuce and pickled onions.

Place the cutlet on the onion, only now add salt and pepper to the cutlet.

Place a slice of tomato on the cutlet; it will make the beef juicier.

Top everything with a slice of toasted cheese.

And lastly we lay out the top part of the bun, also greased with sauce.

Serve delicious homemade burgers immediately.

Burgers- not the healthiest food, but sometimes you really want to eat a cutlet with a bun. This is confirmed by the queues 😆 But why stand in them if you can make burgers at home.

In fact, there is nothing complicated about this: the ingredients are simple, not very expensive and are sold in any store. Cooking takes no more than an hour, but as a result you get a lot of pleasure: it’s delicious and you did it all yourself.

Our recipe extremely simple: Polish buns for burgers (Belarusian ones dry out quickly and are not very tasty), minced meat for cutlets, processed cheese (Hochland or President), tomatoes, cucumbers (salted is better, but fresh ones are also great), lettuce, spices and sauce ( We make it based on French mustard, but you can use some store bought one).

We buy minced meat either at ProStore or at the butcher shop on Checheta, 7 (they grind it themselves without adding bacon or other nasty stuff). To the minced meat we add one chicken egg, a piece of loaf soaked in milk, onion and garlic ground in a blender and, of course, salt and spices - pepper, cumin, parsley, cumin, coriander.

First fry the buns a little and dry them in a frying pan, mix the minced meat, make cutlets and fry them in a frying pan, adding a little oil. The cutlets would come out prettier and tastier on the grill, but regular ones are also great for burgers.

This is the simplest recipe. There are probably more sophisticated options, but it turns out very tasty. And the average price of such a homemade burger is about 20 thousand Belarusian rubles.
