Wash 400 g of carrot roots, peel them, cut them into small strips, which are placed in an enamel bowl, pour 250 ml of fresh boiling water, add 3 tbsp. spoons of 3% vinegar, 2 teaspoons of sugar and salt, the amount of which is adjusted to taste. The cup is covered with a lid, the edges of which should fit tightly to the top edge of the dish. The carrots are kept in this state for up to 10 minutes, after which they are discarded in a colander and allowed to cool. Next, the resulting mass is mixed with a can of green peas and half a can of canned corn. Finely chopped onion is also added. All this is seasoned with mayonnaise and put in the refrigerator for 1.5 hours so that the salad infuses.

Salad "Mexico City"

Place 200 g of hard cheese cut into thin strips, the same amount of half-smoked sausage, 3 bell peppers of various colors, 4 ripe fleshy tomatoes, 1 cucumber, and a large onion. 100 g of canned corn and green peas are also added there. For dressing use olive oil, to which a little balsamic vinegar is added.

Salad "Far Eastern"

Corn

We are used to eating corn either on the cob or using canned corn - mainly in salads. However, corn also makes wonderful side dishes.

Corn with pepper

A simple side dish that can also serve as a salad. For it you need to take:

  • 4 cups fresh or frozen corn
  • 0.5 cups red bell pepper
  • sugar
  • butter
  • green onions

Heat the butter in a frying pan, add bell pepper, chopped green onions (the white part, you can also use onions), cumin and fry for about 3 minutes. Then add the corn kernels, salt and pepper, mix thoroughly and leave on medium heat under a closed lid. After about five minutes, you can sprinkle the corn with the remaining green onions and serve the dish.

Corn with green beans

You will need:

  • 300 grams of boiled corn
  • 300 grams of green beans
  • 1 tablespoon olive oil
  • vinegar
  • thyme
  • 150 grams spinach to taste

Pour oil into a frying pan, heat and simmer the corn and beans in it for 6 minutes over high heat. Then add the thyme and spinach, if using, reduce the heat and simmer for a few more minutes, then turn off the heat. Season with salt, pepper, vinegar (to taste) and leave to steep on the stove for five minutes.

Corn with tomatoes

For this side dish, which is perfect for meat and fish, you will need:

  • 2 cups boiled corn
  • 2 cups tomatoes (you can use cherry tomatoes for beauty)
  • 3 cloves garlic
  • green onions
  • 1 tablespoon vinegar
  • oil
  • pepper

Heat butter in a frying pan and fry green onions and chopped garlic. Add tomatoes and corn, stirring, simmer for 5 minutes. Then turn off the gas, salt and pepper the corn, sprinkle with vinegar. If desired, you can sprinkle with any herbs, and also prepare a mixture of corn and green beans.

Corn puree

For this recipe, it is better to use fresh corn on the cob, but if you don’t have it, you can adjust the recipe to ready-made corn. So, we will need:

  • 5 ears of corn
  • 2 cloves garlic
  • 1 tablespoon flour
  • 200 milliliters cream
  • green onions
  • pepper
  • butter
  • sugar
  • thyme
  • peppercorns

We clean the cobs and cut off the corn kernels. We cut the cobs themselves in half. We put the leaves and chopped cobs in a saucepan, fill it with water, add salt, peppercorns, chopped garlic and let it cook for half an hour, and then filter.

Heat the butter in a thick saucepan and fry the chopped green onions - you can add a little sugar to caramelize them. Add flour there and fry it until golden brown: you need to be careful here, because the flour burns very quickly. Add a little corn broth to the pan, mix thoroughly and add the corn. Now you need to fill it with broth so that it almost does not cover the grains, but is flush with them. It is worth noting that corn is not rice and does not absorb water, so a large amount of broth will turn your puree into soup.

Cook over low heat until the corn is cooked (about 2 hours). Salt, pepper, add thyme, pass through a blender. If desired, you can rub the puree through a sieve - this will make it completely tender and silky. Now dilute it with cream to the required thickness and... Done! Sprinkle green onions on top and serve.

Peas

The season for fresh green peas has already ended, but you can always take frozen ones - they do not lose either their taste or beneficial properties. Side dishes with it will turn out beautiful and tasty. Ordinary, dry peas are also used for side dishes - they turn out just as good!

Falafel

An excellent side dish, popular in Israel and Arab countries. It is prepared from chickpeas (nokhat), adding herbs and spices, so that the inside turns out to be a cheerful green color. You will need:

  • 450 grams chickpeas
  • 3 medium onions
  • 3 cloves garlic
  • 1 bunch of parsley
  • 1 bunch of cilantro
  • 1 white bun or several slices of white bread
  • allspice

Before preparing falafel, soak the chickpeas overnight in salted water with a pinch of baking soda. When it becomes soft, pour out the water and grind the peas in a meat grinder, blender, coffee grinder or food processor until it reaches a puree-like consistency; there is no need to cook it. Onions, garlic, herbs and buns are also passed through a meat grinder or blender and mixed with peas. Stir in salt, pepper and cumin, and you can start frying. Roll the puree into small balls and fry in oil until golden brown. Place the finished falafel on paper towels to absorb excess fat.

Hummus

Another dish from Israel. Either a sauce or a side dish, you can eat it simply with bread, or with meat, or with boiled peas, which is surprising. For preparation you will need:

  • 1 cup chickpeas
  • 2 cloves garlic
  • 2 tablespoons sesame paste
  • 1 teaspoon cumin
  • 1 lemon
  • black pepper
  • vegetable oil

The chickpeas, as in the previous recipe, need to be soaked overnight. Then drain the water, and it is advisable to peel the skins from the peas (this is an option for the patient) - without them, the hummus will become very, very tender. Then set the peas to boil and cook over low heat for about 4 hours. If you don’t have tahini (sesame paste), you can prepare it yourself: fry the sesame seeds in a frying pan until golden brown, and then grind them in a mortar with vegetable oil. You can also use a blender if its configuration allows you to grind such small products.

When the peas are cooked, you need to salt them and drain the water, leaving a glass or two for hummus. If you wish, you can use vegetable broth. Now grind the chickpeas and garlic, adding a little liquid to the desired consistency. When the puree is ready, add cumin, sesame paste, salt and pepper and mix well. Now you need to add oil, pouring it in a thin stream and whisking the hummus - the amount of oil depends on your taste. If desired, add lemon juice to the hummus.

Pea porridge

The name is not so great, is it? However, the dish turns out very tasty and tender, similar to pate. Preparing porridge is quite simple, we take the following products:

  • 1 cup regular peas (not nohata)
  • 3 cups water or vegetable broth
  • 1 onion
  • vegetable oil
  • bacon or brisket to taste

We wash the peas and leave them in water overnight so that they cook faster. Then you need to drain the water and rinse the peas again. Cut the onion and bacon (if you are using it) into small cubes and fry in vegetable oil. Place peas, fried onions and bacon in a thick-walled saucepan (or stewpan), add water or broth and add some salt.

Now you need to bring the future porridge to a boil, reduce the heat to the lowest setting, cover with a lid, and prepare the main dish. The minimum time it will take to cook the porridge is about 50 minutes. From time to time you need to stir it and see if the peas are cooked. If the liquid has boiled away but the peas remain hard, add a little more boiling water or hot broth. The finished porridge can be sprinkled with herbs.

Nigella Lawson's Green Pea Puree

Nigella Lawson is a British presenter and cookery author. Her recipe for mashed peas is very simple and only takes 15 minutes to prepare. You will need to take:

  • 1 clove of garlic
  • 150 grams frozen green peas
  • 1-2 tablespoons sour cream or creme fraiche
  • 1-2 tablespoons grated Parmesan or other hard cheese
  • 0.5 teaspoon dry mint

Throw a clove of garlic into a saucepan with cold water, bring the water to a boil, salt it and add peas. Cook over medium heat until the peas are tender, then drain and place in a blender bowl. Add the crème fraîche (sour cream), cheese and mint, then puree the mixture until smooth and smooth.

Italian style green peas

A very simple and easy to prepare side dish, the recipe for which came to us from Italy itself. There, as we have already said, they really like peas. For this side dish you will need:

  • 1 chopped onion
  • 2-3 cloves finely chopped garlic
  • 450 grams of green peas (can be frozen)
  • vegetable oil
  • chicken bouillon
  • pepper

Cooking: heat the vegetable oil in a frying pan and fry the onion and garlic in it. Add frozen peas and a spoon or two of broth, salt and pepper. Now you can cover with a lid, reduce the heat and simmer for about 10 minutes until the peas are soft.

You can create a juicy, tasty and quick-to-prepare salad in literally 5 minutes in your kitchen if you purchase jars of green peas and corn, some smoked or dry-cured sausage and mayonnaise in advance from the store. If desired, you can add green or onions, olives, capers, etc. to the dish. It is recommended to dress the salad with mayonnaise. Moreover, you can choose this sauce according to your taste: dietary, fatty, garlic, with mustard, etc. Don’t forget to add fresh dill or parsley, and for those who love spicy flavors, we can recommend squeezing a few cloves of garlic into a container, first cleaning them and rinsing them in water.

Ingredients

  • 0.5 cans of canned green peas
  • 0.5 cans canned corn
  • 300 g smoked or dry-cured sausage
  • 2 pinches of salt
  • 1 pinch ground black pepper
  • dill to taste
  • 1.5 tbsp. l. mayonnaise

Preparation

1. Open the can of canned corn and carefully pour out all the marinade. You can simply throw the contents of the container into a colander and the marinade will all drain out on its own. Place half of the strained mass into a deep container. If you are preparing a salad for more people, use the entire jar.

2. We will do the same with canned green peas. If desired, you can replace it with fresh or frozen peas, but then the product will have to be boiled for 3-4 minutes in a marinade consisting of vinegar, salt and water.

3. Cut smoked or dry-cured sausage diagonally into slices and each slice into medium cubes, pouring the slices into a deep container. If desired, instead of smoked sausage, you can use milk or doctor's sausage, ham, or meatloaf.

4. Add mayonnaise, salt and ground black pepper. At the same stage, you can add finely chopped onions or green onions. Mix everything carefully.
