I tasted this dish for a very long time, but suddenly I really wanted to cook and try again! I don't remember the name, but I reconstructed the recipe from memory. And although in fact these are all the same dumplings, they are much tastier and more unusual.

Do not roll out the dough too thin. Put a layer of minced meat on the layer, roll into a roll and cut into small pieces. In theory, you can just put out the rolls in salted water, but firstly, in our family everyone loves gravy and more, and secondly, there is a risk that they will boil and fall apart, and I don’t want to serve porridge from dough with minced meat for dinner. Therefore, I think it's better to do so.

Pre-fry the pieces in vegetable oil.

Prepare a simple vegetable gravy (for example, from finely chopped onions and carrots grated on a coarse grater) with spices.

Pour in the sauce so that the rolls are completely immersed in it, and simmer for 15-20 minutes over low heat.

It takes just a little time to cook (it's much faster than sculpting dumplings by hand, by the way). It turns out a new, tasty and satisfying dish. According to the son, it doesn’t taste like dumplings at all. ;) The only thing that bothered me was... everyone was wondering what these rolls were called anyway? Having searched culinary sites, I found out that according to the recipe and the order of preparation, they almost exactly resemble TsUNGALI, but I will not say.

If you are thinking about what to make from meat and serve it to the table, prepare a minced meat roll. It turns out very satisfying, tasty and tender.

The combination of boiled eggs and meat will give a unique taste. After such a meal, the body will remain full for a long time.

A boiled egg goes well with meat, it is not for nothing that these ingredients often coexist in salads.

You will need:

  • onion - 1 pc.;
  • ground beef - 0.5 kg;
  • egg - 5 pcs.;
  • potatoes - 1 pc.;
  • salt to taste;
  • carrots - 1 pc.;
  • a pinch of pepper;
  • fresh parsley - 1 bunch.

How to make a delicious roll:

  1. Using a meat grinder, we make minced meat from a piece of meat, or we buy it ready-made in a store.
  2. For softness, pour grated raw potatoes into the meat mass.
  3. Peeled carrots are also chopped on a grater. Chop the washed parsley with a knife.
  4. We combine processed vegetables and minced meat, break one raw egg.
  5. We put the rest of the eggs on the gas stove and cook.
  6. Pour salt and pepper to the meat, knead the minced meat with your hands, you can beat it a little so that the roll inside is soft.
  7. We take a piece of foil for baking with an area of ​​\u200b\u200b20 by 15 centimeters. Lay it out on a baking sheet.
  8. We drip a little vegetable oil and spread the minced meat on top, giving it the shape of a rectangle.
  9. The eggs are just cooked - peel them.
  10. We lay out in a whole form on minced meat. Raising the foil, we wrap our roll.
  11. Do this carefully, make sure that the minced meat layer does not crack. We close the edges of the foil over the roll.
  12. We heat the oven to 160 degrees. Then we will increase the temperature.
  13. We put a baking sheet with a roll to bake for 35 minutes. After 15 minutes, check and raise the temperature to 200 degrees.
  14. Bake for 35 minutes.
  15. 10 minutes before the end of cooking, unfold the foil.
  16. Cool the meat delicacy and decorate with sprigs of fresh parsley. It remains to cut the roll into circles and serve.

Stuffed with cabbage and vegetables

Recipe Ingredients:

  • one small onion;
  • semolina - 50 gr;
  • some dried basil
  • minced beef - 0.5 kg;
  • salt and pepper to taste;
  • sour cream - 100 gr;
  • half a small head of cabbage;
  • three stalks of green onions;
  • one carrot;
  • broth for stewing;
  • bunch of parsley.

How to cook minced meatloaf:

  1. Pour a little hot water into a glass with semolina and mix, making sure that no lumps appear.
  2. Finely chop the peeled onion with a knife.
  3. Pour salt, basil and pepper into the meat mass, add semolina and knead the minced meat with your hands.
  4. We beat it in a plate for 5 minutes. This must be done so that the future roll does not tear during baking.
  5. We remove the minced meat in foil in the refrigerator for 10 minutes.
  6. Now let's prepare the filling. Finely chop cabbage leaves and onion arrows.
  7. Peeled carrots cut into thin slices.
  8. With the addition of oil, fry all the vegetables until soft.
  9. Pour a little broth, add pepper and salt and simmer the filling for 10 minutes.
  10. Place two layers of cling film on the countertop.
  11. We distribute minced meat on it.
  12. We spread the filling over the entire surface of the minced meat. Pour sour cream over vegetables.
  13. We turn the roll. We close its edge tightly and pinch it.
  14. The resulting roll can be sprinkled on top with breading.
  15. We close it in the oven for 40 minutes. The temperature is 190 degrees.

Roll of minced chicken

  6. Cut milk cheese into slices.
  7. We heat the oven to a temperature of 200 degrees.
  8. We spread the foil for baking on a baking sheet, pour a little vegetable oil on it.
  9. Spread the minced meat evenly over the foil.
  10. Fill the meat mass with slices of cheese and pepper.
  11. We turn the roll, carefully fastening the edges and send it to a hot oven.
  12. We cook the dish for 40 minutes, open the foil and bake the roll open for another 7 minutes.

With mushrooms and cheese

Required Ingredients:

  • milk - 200 ml;
  • minced pork - 0.5 kg;
  • milk cheese - 100 gr;
  • white bread - 150 gr;
  • champignons - 0.3 kg;
  • egg - 2 pcs.;
  • salt to taste;
  • onion - 2 pcs.

Step by step preparation:

  1. Pour two chicken eggs into the prepared minced pork.

  5. Add the roast to the minced meat. Then pour coriander, semolina, breadcrumbs, salt, break an egg. Mix everything.

  7. Wrap the layers in cling film, making a sausage. Wrap the package in special foil.
  8. Boil the roll in a saucepan with water for an hour over low heat.
  9. After that, cool the dish, sprinkle with grated cheese and put in a 200 degree oven for 15 minutes.

  • minced beef - 1 kg;
  • garlic cloves - 2 pcs.;
  • white bread - 200 gr;
  • onions - 2 pcs.;
  • breadcrumbs - 20 gr;
  • smoked bacon - 200 gr;
  • egg - 5 pcs.;
  • milk - 0.2 l;

  1. Soak slices of bread in milk, after 5 minutes squeeze and put in minced meat.
  2. We chop chopped onion and garlic there, break two eggs, add mustard and bulk products. Mix the mass of minced meat well.
  3. Separately, boil three eggs in a saucepan.
  4. Treat the baking sheet with vegetable oil. Put half of the minced meat on it.
  5. Place the halves of three peeled eggs on top.
  6. We cover them with the second half of minced meat.
  7. Twist the roll, sprinkle breadcrumbs on top, wrap with bacon.
  8. Cook in the oven for 60 minutes. Just imagine the aroma wafting through the kitchen and the wonderful taste of the bacon roll.

Prepare the dough like dumplings. Mix eggs with water for this, salt, add sifted flour, knead elastic dough. You need as much flour as the dough will “take”. Add flour in small portions so that the dough is not too hard. Once the dough has been thoroughly kneaded, cover and set aside. It should "rest". The dough can be prepared only on water, if suddenly there were no eggs. Then you need to take a little more water than indicated in the ingredients. The water should be boiled. While the dough is settling, make minced meat. Twist the meat and 2 onions in a meat grinder, chop the remaining onion very finely and set aside. Mix minced meat and twisted onion, salt and pepper. For juiciness, you can add a little water to the minced meat.


Roll out the dough into a thin layer.


Put the minced meat on top in a thin layer, leaving a little space from the edges of the dough. Minced meat should be well smeared over the dough.


Sprinkle the finely chopped onion on top of the minced meat. This will make the finished dish more juicy. And then evenly spread small pieces of butter on top of the onion. This should be done only if you do not have fatty meat.


Roll up seam side down. Pinch the edges.


I cook such a roll in a pan, so I immediately give it a rounded shape so that it fits later in the dish.


Cut the vegetables for the sauce. In addition to these ingredients, you can add sweet pepper and tomato. Onions should be cut into half rings, carrots, tomatoes and sweet peppers into small slices. This time I didn't have tomato and sweet pepper, but they taste better with them. Even if I cook with tomato, I still add tomato paste.


Fry onion and carrot in a deep frying pan or saucepan in sunflower oil for 1 minute, add pepper and tomato, fry everything together for another minute, add tomato paste, mix, pour water or broth so that later the roll is half in liquid, salt . Bring to a boil, lower the heat to a low simmer, and place the roll in the pan, seam side down. Cover and simmer over low heat for 30-40 minutes.


Put the finished roll in a large dish, pour over the vegetable sauce, sprinkle with your favorite herbs, cut into portions. This roll goes well with sour cream. But delicious without it. It does not need a side dish, it is an independent dish. You can steam this dish like manti. But stew, for my taste, it turns out more juicy and tasty. A roll stewed with vegetables is also suitable for a festive table, and is good as an everyday meal. Sometimes I serve a cut roll to guests as a cold appetizer. It is very convenient to cook 2 or 3 rolls at once and freeze part of it in the freezer, and cook it if necessary. The process of preparing a frozen roll is absolutely identical.

Puff roll with cheese and cottage cheese

Required products:
yeast puff pastry - 1 pack 500 gr. (pre-defrost)
cheese - 500 gr
cottage cheese - 300 gr (cottage cheese must be taken dry, crumbly)
dill - 1 bunch
egg - 1 pc (protein in minced meat, yolk for lubrication)
milk 1 tbsp. (for lubrication)
vegetable oil for lubrication.
Mash the cottage cheese in a bowl.
Brynza cut into cubes.
Chop dill and onion
Mix all the minced ingredients, add the egg white and mix well.
We cover the baking sheet with baking paper, grease the paper with vegetable oil.
If the dough is in a roll, cut it into 2 parts. We roll each layer into a square about 30 by 30 cm in size. Put half of the filling on each layer, distribute it over the entire layer.
We roll into a roll. From the specified amount of products, I get 2 rolls.
Put both rolls on a baking sheet. Let the dough rise for 1-1.5 hours.
Before baking the rolls, add 1 tablespoon of milk to the yolk, mix and spread them with the resulting mixture so that they become golden during baking. Bake at a temperature of 180 degrees for 30 minutes.

The famous Orsk liver pies made from batter

We take chicken liver in equal proportions: a pound of heart, stomach and liver. Grind in a meat grinder with a large grate. Then simmer the minced meat for 20-25 minutes in a deep frying pan until tender.

Salt, pepper. Then add a pound of onion ground in a meat grinder to the hot minced meat. Onions with minced meat do not need to be stewed. This is what makes sense. Just quickly stir the onion with hot minced meat and leave the filling to cool.

Pie dough is very easy to make. Dissolve yeast and sugar in warm water. Let stand for 10 minutes, then add salt, all flour, stir well. After 45 minutes the dough is ready. But it is better to stir the dough again, 20 minutes after kneading.

It turns out the dough is very liquid, a little thicker than sourdough.

And then the hardest part begins. Because, sculpting such pies, in the absence of skill, is not an easy task. The most important thing here is not to be afraid to wrap the dough, and wash your hands more often and wipe them dry before once again greasing them with oil.

First you need to heat the oil for frying. Lots of oil. Best of all - right in the pan.

Then oil the table well. You can pour oil into a bowl - it will be convenient to lubricate your hands. And even more convenient - immediately put a bowl of cold water next to it - wash your hands.

We literally dip our palms into the oil and then pinch off pieces of dough.

After that, again (!) Wash my hands, wipe dry. Grease with oil again.

We spread a piece of dough on the palm, flatten it into a cake.

We spread the filling with a spoon and distribute it a little along the length of the pie.

Then simply roll up the dough from one end.

The resulting pie is quickly lowered into deep fat.

We will need:
Dough:
Flour - 450 g,
Water - 230 g,
Dry yeast - 1 tsp,
Sugar - 1 tbsp. l.,

I cut the onion last, I don’t want to cry from the very beginning. It must be finely chopped into cubes and mixed with minced meat in the same way. Knead elastic dough. Cover it and let it rest for 30 minutes. Divide the dough into two parts and roll each into a thin rectangular layer.
Spread the filling on the dough with a thin layer. And wrap it tightly into a roll.
Cut the roll into portioned pieces 7-8 cm wide. Place cut side down in a greased form with vegetable oil. Fill the strudel halfway with water or broth. Close the lid, let it boil and cook on the stove over low heat for 30-40 minutes. until the water is completely boiled away. We continue to clean the refrigerator ... In order to unload the freezer, we take out a package of puff pastry, a bag of chopped mushrooms (well, lazy, I’m even too lazy to cut) and minced beef, ready, really, but not bad. We think - what would be good to do this? And of course, French roll! Effortless and fast! No sooner said than done!
Ingredients: ready-made puff pastry - 1 plate, minced meat (I have beef) - 400 gr., chopped mushrooms (champignons) - I poured half a package of 900 gr. about the same as minced meat, 1 onion, 2 eggs, 3-4 tablespoons of breadcrumbs, which I didn’t have - I replaced it with wheat bran, it didn’t affect the taste, salt, pepper (to taste), 1 tbsp. a spoonful of vegetable oil.
While the dough is defrosting, make the filling.
Fry the diced onion in oil and without oil - champignons (until the water evaporates). If the mushrooms are used raw, they must be cut into cubes like onions, and after sautéing the onions, simply add to the same pan. I had to do two. We shift the onion to the mushrooms.
Fry the mushrooms with onions for a few minutes, then add the minced meat, mix, salt, pepper and fry (until the minced meat is fried). Cool down.
Add breadcrumbs (I have bran) and 1 egg to the cooled minced meat, mix.
Spread the minced meat in an even layer on the rolled out dough.

At the lower leg, separate the meat from the bones, remove the skin, cartilage, veins and films. Grind the leg pulp in a meat grinder or in a processor. Add 50 g of chopped nuts to the minced meat,
cream, salt, pepper, aromatic herbs. Mix well.
Place the layer from the thigh on baking paper. Repulse him. Drain, pepper the meat.
Form a sausage from the minced meat and place it on the wider edge of the layer.
Roll the meat into a roll.
Wrap the roll in baking paper and tie with kitchen twine.
Place the roll in a baking dish and brush the paper with olive oil. Bake for about 1 hour.

Wrap the finished roll with strips of dough, brush with beaten egg, sprinkle with coarse sea salt (I sprinkled with Hawaiian black salt and pink Himalayan salt) and bake for 30 minutes or until the dough is browned at 180 °. I added a "bone" from puff pastry so that the finished roll resembled okrok in shape.
Serve the roll with sauce.
